Sausage and Veggie Rice Bowl

Ingredients
- 15 oz. (1 ½ packages) Chicken Sausage
- 2 Sweet Potatoes, ends removed
- 1 cup Broccoli Florets
- 2 Sweet Bell Peppers
- 2 tbsp. Olive Oil
- 1 tbsp. Sky Valley Red Sriracha, plus more, for serving
- 1 c. Rice
Directions
- Preheat the oven to 450 degrees F and line a large sheet pan with parchment paper or aluminum foil.
- Cut the sausage and vegetables into equal-sized pieces, approximately 1 inch each. Place them in a bowl.
- Add olive oil, Sky Valley Red Sriracha sauce, salt, and pepper to the bowl. Mix everything together until well combined.
- Transfer the mixture to the prepared sheet pan and spread it out into an even layer. If needed, use two sheet pans to ensure everything fits in a single layer.
- Bake in the preheated oven for 25 minutes, stirring the ingredients halfway through cooking. For extra crispiness, you can raise the oven rack to the highest level, turn on the broiler, and broil for 1 minute. Keep a close eye on it to prevent burning.
- While sausage and veggies are cooking, cook rice in a saucepan. Set aside.
- Remove the sheet pan from the oven and let it cool slightly. Serve over rice, top with an additional drizzle of Sky Valley Red Sriracha and enjoy your delicious spicy sausage and veggie meal!
